Costa Rican coffees are traditionally known for their sweetness, crisp profiles, and smooth acidity – a little too smooth for some in specialty coffee circles, who tend to prefer a brighter, more-pointed cup. This has led to the country’s producers implementing new processing techniques, including wild fermentation of ripe cherry. This lot from Roberto Montero of Finca Amistad uses the tried and true wet-process method, with some meticulous mechanical drying, on proven varieties of cherry to produce a refined, sweet, and bright version of the classic Costa Rican profile.
